Cava Azul is an offspring from the Agave Cochina & Cantina chain of restaurants located in Redmond & Kent which features “contemporary hand-crafted Mexican food, using fresh, natural ingredients, free of preservatives, trans fats and lard. Sustainable, free-range, hormone-free chicken, pork and beef are menus staples; as are organic vegetables, eggs, rice and beans.” We knew that Woodinville was underserved so we began to look for an expansion of Agave. We found a fast food burger place in the Haggen’s mall in downtown Woodinville that was available for purchase.
Because of the site being “smaller” than a traditional Agave we “invented” a contemporary, smaller version of Agave and named it Cava Azul that is “more labor efficient” than a traditional Agave. We developed a “new” menu with interesting preparations & presentations as well as updated most of the items that were “borrowed” from the existing site. Aside from menu development we transacted the real estate, assisted in the staffing & management, marketing & advertising, and financial metrics.
We continue to work with both ownership and management to improve upon which is a very successful concept and not even a year old.
